Alexis Soyer (1810â€"58) was perhaps the first celebrity chef. A flamboyant, larger-than-life figure, he nonetheless took his profession very seriously. This vivid account of feeding nutritious meals to soldiers serving in the Crimean War, using a newly invented portable field stove, was first published in 1857.
